microbial control in the meat production process of four-legged animals. Methods of processing four-legged animals for slaughter for consumption as meat and / or meat products are described. The methods comprise 1) placing the outer surfaces of the living animal at least once in contact with a microbial solution formed from the mixture of at least (i) water and (ii) at least one n, n'-bromochlor-5, 5-dialkylidantoin, such contact occurring at least once when the animal is in the process of being slaughtered but before being killed by bleeding; or ii) contacting the carcass of the animal after bleeding with a microbicidal solution formed from the mixture of at least (i) water and (ii) at least one n, n'-bromochlor-5,5-dialkylidantoin; or (c) contacting at least one raw meat product and / or at least one processed meat product derived from said carcass at least once with a microbicidal solution formed from the mixture of at least (i) water and (ii) ) at least one n, n'-bromochloro-5,5-dialkylidantoin; or (iii) contacting at least one raw meat product and / or at least one processed meat product derived from the carcase. the contact may be made one or more times on each of i), ii), and iii). Considerable advantages, which are described, are realized when using such methods.
