The present utility model is a process of producing a ready-to-drink beverage made from yacon (Smallanthus sonchifolius) tubers naturally sweetened and flavored. The juice packed in 250 ml bottles is clear and light brown in color. It is high in potassium, fructooligosaccharides, phenols, which can be marketed as a low-calorie with antioxidant ready-to-drink juice. The process of producing ready-to-drink yacon juice consists of washing, peeling and slicing the yacon tubers, extracting the juice from the yacon tubers, evaporating or concentrating and filtering the juice extract, adding the natural fruit flavor and ascorbic acid, decanting and filtering the concentrated extract, then packaging.
