Thus we achieve chemical modification of the components of the plant wall of the raw material. By combining extraction temperatures and spray drying is accomplished to obtain a pectin with a molecular weight of 10-20 kDa, a degree of polymerization of 30-70 units and a degree of esterification below 50%. Thus modified pectins and high antitumor alcoholic extract power are obtained.
