The proposed method achieves the simultaneous and substantial increase of more than one phenolic compound with healthy biological activity in grapes, which are preferably polyphenols and which are more preferably resveratrol and forms of quercetin, and constitutes an alternative to the procedures using phytohormones as agents of activation.
