Process for increasing the content of phenols with biological activity in red grapes comprising an exogenous treatment with an enantiomer of methyl jasmonate in ethanol diluted. # The presence of polyphenolic compounds in grapes makes current consumption many beneficial health effects. The present invention presents for the first time a simple postharvest process comprising contacting exogenously red grapes with an enantiomer of JM diluted in ethanol. The proposed method achieves simultaneous and substantial increase of more than a phenolic compound with healthy biological activity in grapes, which are preferably polyphenols and are more preferably resveratrol and forms of quercetin, and constitutes an alternative to the processes using phytohormones as agents activation.
