The present invention relates to a method for producing high-concentration monacolin K which is a substance inhibiting cholesterol production via a liquid culture of Monascus mycelium. More specifically, the present invention relates to a culture medium composition used for culturing Monascus mycelium and a culture condition. To this end, the method comprises the following steps: producing a culture medium composed of a nutritional carbon source required during the culture of liquid mycelium of Monascus, types of organic nitrogen sources and the same; and producing high-concentration monacolin K by setting an optimized initial pH and a culture temperature required for the culture.;COPYRIGHT KIPO 2016
