The present invention relates to a novel strain of Saccharomyces cerevisiae HJ-014 (KACC93219P) with ginsenoside bioconversion ability, and to a manufacturing method of a fermented red ginseng extract using the same. -glucosidase producing yeast is isolated from Korean traditional rice wine, especially Makgeolli, and is identified. The novel yeast strain can effectively produce a compound K from a crude ethanol extract of ginseng. A manufacturing method of a fermented red ginseng extract comprises steps of inoculating a red ginseng extract with a strain of Saccharomyces cerevisiae HJ-014 (KACC93219P), and cultivating the strain.
