The present invention relates to a manufacturing method of sweet potato-mixed red bean jelly and the sweet potato-mixed red bean jelly manufactured by the method. The manufacturing method of sweet potato-mixed red bean jelly comprises the following steps: (a) manufacturing a sweet potato filling by crushing sweet potatoes after steaming; (b) manufacturing a minor ingredient filling by crushing and steaming rice bran, red beans, or brown rice after washing and immersing the same in water ; (c) preparing a mixed filling by mixing the sweet potato filling in step (a) and the minor ingredient filling in step (b); (d) adding agar powder in water before soaking and boiling, and adding sugar and melting the sugar; and (e) adding the mixed filling prepared in step (c) to the agar water with melted sugar from step (d), boiling the same, and inserting starch syrup into the mixture before boiling down and cooling the same.
