A process for the preparation of Deep-fried Glass Noodles in Seaweed of potato or sweet potato and the Deep-fried Glass Noodles in Seaweed of potato or sweet potato prepared therefrom
The present invention relates to a method for manufacturing deep-fried glass noodles in seaweed with potato or sweet potato and the deep-fried glass noodles in seaweed with potato or sweet potato manufactured thereby. The deep-fried glass noodles in seaweed with potato or sweet potato manufactured by the method according to the present invention which comprises: (S1) peeling and washing potato or sweet potato; (S2) finely cutting the washed potato or sweet potato; (S3) steaming the finely cut potato or sweet potato at 92-98C for 1-3 minutes; (S4) cooking glass noodles in boiling water for 5-7 minutes and then cooling the glass noodles at room temperature for 10-15 minutes, then seasoning the same by adding soy sauce of 0.5-3 wt% of total weight of the glass noodles; (S5) preparing glass noodles in seaweed with potato or sweet potato by putting 55-75 wt% of the seasoned glass noodles on the top of unfolded dried laver and piling 25-45 wt% of the steamed potato or sweet potato, and then rolling the dried laver into a cylindrical form; (S6) preparing batter by mixing acai berry, garlic, onion, and carrot with glutinous rice powder; (S7) dipping the prepared glass noodles in seaweed with potato or sweet potato in the batter; and (S8) deep-frying the glass noodles in seaweed with potato or sweet potato coated with the batter in cooking oil at 160-170C for 5-7 minutes, is low in calories and fat and rich in fiber and protein, thereby being a healthy well-being food edible as a healthy snack or meal substitution food for busy modern people.
