The present invention relates to a method for increasing the antioxidant activities of peanut sprouts in comparison with a control group, relates to a manufacturing method of peanut sprouts with the increased antioxidant activities in comparison with the control group, relates to peanut sprouts with the increased antioxidant activities manufactured by the method, and relates to a processed food containing the peanut sprouts. The method for increasing the antioxidant activities of peanut sprouts in comparison with the control group comprises the following steps of: (a) immersing a peanut seed under the dark condition to be germinated; and (b) irradiating the peanut seed germinated in step (a) with light emitting diode (LED).
