The present invention relates to freeze dried ginseng containing vitamins and herb medicine components, and to a preparation method thereof. The freeze dried ginseng preparation method comprises: a pre-treatment step of preparing raw ginseng in an original shape by washing and sorting raw ginseng, and slicing the resultant product to have a predetermined thickness or cutting and removing rootlets from the resultant product; a vitamin aqueous solution preparation step of preparing a vitamin aqueous solution by dissolving water soluble vitamin C and vitamin B complex in purified water with a predetermined ratio; a herbal medicine extract preparation step of preparing a herbal medicine extract by mixing Hovenia dulcis, Artemisia capillaris Thunberg, and Glycyrrhiza uralensis Fischer with a predetermined ratio, and water extracting the resultant product; a mixed aqueous solution treatment step of forming a film by soaking the pre-treated raw ginseng into the mixed aqueous solution, in which the vitamin aqueous solution and the herbal medicine extract are mixed with the predetermined ratio, at a temperature of 25-55C for 40-60 hours, or by coating the pre-treated raw ginseng with a predetermined amount of the mixed aqueous solution in a spraying manner; and a freeze drying step of removing moisture from the raw ginseng until the moisture content becomes less than or equal to 5 wt% by freeze drying the raw ginseng, treated with the mixed aqueous solution, while allowing active ingredients of the mixed aqueous solution to be infiltrated and adsorbed inside the raw ginseng by forming fine pores on the raw ginseng due to the moisture removal. Accordingly, the vitamin C, the vitamin B complex, and the active ingredients of the Hovenia dulcis, Artemisia capillaris Thunberg, and Glycyrrhiza uralensis Fischer are abundantly impregnated into the completed freeze dried ginseng, therefore a user can have internal energy metabolism activation effects, liver function protection effects, antioxidant effects, fatigue recovery effects, etc., in addition to the basic effects of the ginseng when the user takes the freeze dried ginseng.
