FIELD: food industry.;SUBSTANCE: invention relates to food industry. Liquid or viscous composition containing one or more types of bioactive molecules occurring naturally in milk is treated by pulsed electric field (PEF) with the effect of specific energy 400 kJ/kg of the composition or less, field intensity 10-20 kV/cm. PEF-treatment is applied in one or more collinear treatment chambers with a channel. Wherein composition is continuously directed through the channel of a treatment chamber, where an inner element is provided inside the channel so, that composition is directed around the internal element in the treatment chamber which is inert and nonconducting. Pulse duration is 10 MS or more. Rectangular electric pulses and/or bipolar pulses are used at PEF processing. Temperature of the composition before PEF-treatment is driven to 20-45 °C. Composition contains one or more substances selected from a group, consisting of whole milk, half skimmed milk, skim milk, colostrum, milk with reduced fat content, low fat milk, milk not containing fat, milk whey (milk plasma), milk-based beverage, yoghurt, frozen yoghurt, drinking yoghurt, ice cream, cream, butter, fresh cheese, curd and cheese, powders. Biologically active molecules can be selected from native proteins bioactive lipids, sialic acid, nucleotides, oligosaccharides amino acids, taurine and vitamins occurring naturally in milk.
