PROBLEM TO BE SOLVED: To provide a cooked minced meat having enhanced meat flavor favorably usable as a material of a minced meat-containing food.;SOLUTION: A cooked minced meat, which is a cooked product of a twice minced meat, has a content of not less than 75% of a total of aldehydes and ketones to a total of the aldehydes, the ketones, nitrogen-containing compounds, cyclic compounds, and carboxylic acids contained in an aromatic odor constituent, a content of not greater than 20 mass% of the cyclic compounds to a total of the aldehydes, the ketones, the nitrogen-containing compounds, the cyclic compounds, and the carboxylic acids, and a content of not less than 0.18 mass% of the nitrogen-containing compounds.
