PROBLEM TO BE SOLVED: To provide a new detergent for fresh food excellent in treatability, effective and safe, and in which the removal of saprophyte and freshness maintenance can be more effectively exhibited, and a cleaning method using the same.;SOLUTION: Provided is a detergent 1 for fresh food essentially consisting of calcium oxide derived from a shell coated with a coating agent of a water-soluble stock before or after molding into a tablet shape, in which PH value when being into a 1 wt.% water solution is 12 to 13. Also provided is a method for cleaning fresh food characterized in that, water for cleaning is dissolved with the detergent for fresh food so as to be cleaning water 3, fresh food 4 as the object for cleaning is immersed into the cleaning water 3 for a prescribed time, and thereafter, the fresh food is taken out.;SELECTED DRAWING: Figure 1;COPYRIGHT: (C)2017,JPO&INPIT
