[PROBLEMS] To relatively promote the growth of Bulgarian bacteria and relatively suppress the growth of Thermophilus bacteria. The method for producing fermented milk according to the present invention includes a sterilization process for sterilizing raw milk, a cooling process for cooling raw milk after the heat sterilization process, and a raw milk during or after the cooling process. Starter addition process to obtain fermented milk base material by adding lactic acid bacteria starter containing bacteria and thermophilus, low temperature holding process to maintain fermented milk base material after starter addition process at lower temperature than fermentation promotion temperature, and low temperature holding The heating process which heats the fermented milk base material after a process to fermentation promotion temperature, and the fermentation process which ferments the raw material milk after a heating process and obtains fermented milk are included.
