Problem: Providing a highly safe epimerase and ketose production method that can be used in the food industry. Solution: Ketose 3-epimerase obtained from a microorganism belonging to the genus Arthrobacter and having the amino acid sequence shown in SEQ ID NO: 1 in the sequence listing and the following substrate specificity: (1) D- or L Epimerize position 3 of the ketose to produce the corresponding D- or L-ketose. (2) Among D- or L-ketoses, the substrate specificity for D-fructose and D-psicose is the highest. And a ketose 3-epimerase that epimerizes position 3 of D- or L-ketose represented by SEQ ID NO: 3 or SEQ ID NO: 4 in the sequence listing to generate the corresponding D- or L-ketose.
