(2) Among D- or L-ketoses, the substrate specificity for D-fructose and D-psicose is the highest. And a ketose 3-epimerase that epimerizes position 3 of D- or L-ketose represented by SEQ ID NO: 3 or SEQ ID NO: 4 in the sequence listing to generate the corresponding D- or L-ketose.
