The invention relates to a slow digestible starchcasein conjugate encapsulating hydrophobic compounds for colon targeted controlled delivery of the said hydrophobic compounds, wherein the slow digestible starch (SDS) and casein co-polymer is covalently grafted self-assembled nanoparticles. The slow digestible starch and casein ratio is 2:1, 1:1, 1:2, or 1:4 and the SDS has number average molecular weight of 7400 to 12500, weight average molecular weight from 92500 to 112500, peak molecular weight from 55000 to 75000, Z-average molecular weight from 350500 to 300500, and polydispersity from 8.5 to 11.5. The SDS is produced in the range of temperature cycled retrogradation at 4 to 55 °C, starch to water ratio of 1:1 to 1:5, and temperature cycled time 1 to 30 days. Hydrophobic compounds such as quercetin, curcumin, genistein and catechin have been encapsulated for incorporation in food products.
