Method and gizzard peeler (13) for peeling a gizzard wherein a slit-open gizzard is provided on top of a horizontal and rotating turntable (20) that is provided with rotating rollers (21,22), which rollers have an effective operating surface with respect to the gizzards to be peeled which is at least approximately flush, yet preferably slightly above a surface of the turntable, and arranging that the gizzard moves on top of the turntable from the point where it is deposited (12) to an aperture (14) in the turntable which functions as an exit for peeled gizzards.
