The invention relates to a process for converting a feedstock chosen from lignocellulosic biomass and carbohydrates, alone or as a mixture, into mono- or polyoxygenated compounds, in which the feedstock is brought into contact with a catalyst comprising one or more polyoxometalate salts comprising nickel and tungsten or nickel and molybdenum and in the presence of at least one solvent, said solvent being water alone or in a mixture with at least one other solvent, under a reducing atmosphere, and at a temperature of between 50°C and 300°C, and at a pressure of between 0.5 MPa and 20 MPa.
