Device (1; 100; 100'; 100") for cutting fruits/infructescences (G) having a stalk (P) comprising: a main tubular body (2; 200), defining an inner cavity (4) and provided with a housing (5) for inserting the stalk (P) of the fruit/infructescence, a shaped opening (6) that places the housing (5) in communication with the inner cavity (4) being obtained in the housing; a cutting element (3) suitable to slide along the inner cavity of the main body, so as to assume: an inoperative position in which the cutting element (3) is fully inserted into the inner cavity (4); an operative position in which the cutting element (3) projects from the inner cavity (4) through the shaped opening (6) so as to cut the stalk (P) of the fruit/infructescence; actuator means (7, 40) for moving the cutting element (3) from the first position to the second position, and vice versa.
