The present invention relates to a method for manufacturing various edible mushrooms using a chaga mushroom. More specifically, the manufacturing method comprises the steps of: (a) drying and grinding a chaga mushroom; (b) preparing coconut water; (c) fermenting the coconut water; (d) mixing the dried chaga mushroom and the fermented coconut water; (e) fermenting the mixture in the step (d); (f) drying the fermented material in the step (e); (g) obtaining a fermented chaga mushroom; (h) extracting the fermented chaga mushroom and filtering the same; (i) mixing the fermented chaga mushroom in the step (g) and a medium for culturing mushrooms; (j) adding the extract in the step (h) and sterilizing the mixture; (k) fermenting the sterilized medium in the step (j); (l) inoculating mushroom spawn into the medium for culturing mushrooms in the step (k); (m) adding the extract in the step (h) into the mushroom medium in the step (l) and culturing the spawn; (n) scraping the spawn on the surface of cultured medium, mixing the extract in the step (h) with purified water and supplying moisture; (o) sprouting the medium for culturing mushrooms in the step (n); and (p) growing the sprouted mushroom medium in the step (o) as a fruit body and obtaining the same. Various edible mushrooms produced by the culturing method of the present invention have improved texture and flavor, remove bad smells, have rich flavors of a mushroom, and have high quality with various nutritious components such as betaglucan.;COPYRIGHT KIPO 2016
