The present invention relates to a method for manufacturing Acer mono syrup using an Acer mono sap, and more specifically, to a method for manufacturing Acer mono syrup using an Acer mono sap, comprising the following steps of: manufacturing hard-boiled rice with one, or two or more among grains including rice, sorghum, millet, or corn; manufacturing malt with wheat and/or barley; a saccharification step of saccharifying the manufactured hard-boiled rice and malt, and an Acer mono sap in a weight ratio of 3.2 to 4.2 : 0.5 to 1.2 : 0.9 to 5.0 at 25 to 40°C for 15 to 26 hours; inserting the hard-boiled rice saccharified by the saccharification step into a sack and applying pressure to the sack to acquire a saccharified Acer mono sap; and heating the acquired saccharified Acer mono sap to manufacture an Acer mono syrup. According to the present invention, the Acer mono syrup and jam manufactured thereby are manufactured with the Acer mono sap, so useful components, such as potassium, calcium, iron and manganese, contained in the Acer mono sap are grafted to various dishes in syrup and jam types to be conveniently taken.;COPYRIGHT KIPO 2017
