The present invention relates to a concentration method of Acer mono sap made at a low temperature with non-heating method. The present invention comprises: a step for supplying Acer mono sap; a step for filtering the supplied Acer mono sap and then sterilizing the same by ultraviolet; a first concentration step for filtering the sterilized Acer mono sap, concentrating the same 1-4 times by using reverse osmosis, and then filtering; a second concentration step for concentrating the same 2-10 times at vacuum pressuring bath and then filtering; and a filtering step for filtering the second concentrate by using a filter press. According to the present invention, all manufacturing processes are performed with non-heating method causing no deterioration of flavor and ingredients, and sterilization is successfully performed by using ultraviolet sterilization. Also, since concentration is performed by mixing two methods, reverse osmosis concentration method and vacuum concentration method, highly concentrated syrup, with high sweetness, without no added artificial ingredient, still preserving original active ingredients of Acer mono sap.
