The present invention relates to a ginseng extract including lots of saponin manufactured by steaming side products or roots of ginseng, and processing the steamed side products or roots of ginseng in a heating·cooling cyclic manner a manufacturing method thereof, and more specifically, to a ginseng extract manufactured by heating a steamed material, which is manufactured by steaming side products or roots of ginseng, to make steam of the steamed material, cooling the steam of the steamed material to make a steamed liquid, and reheating the steamed liquid and the steam material and to a manufacturing method thereof. Moreover, the steam of the steamed material generated by mixing functional additives with the steamed material and heating the mixture includes more functional good components, and the finally manufactured ginseng extract includes more functional good components. In comparison with a normal hot water extraction manner continuously heating the steamed material in an internal space of a single chamber to manufacture an extract, a phase of the steamed liquid is changed and circulated in a manner heating the steamed material to generate the steam of the steamed material including good components, cooling the steam of the steamed material, and reheating the cooled steamed liquid, so the content of good components, such as saponin, etc., included in a ginseng extract can be raised.;COPYRIGHT KIPO 2017
