The present invention relates to a dry cabbage soup manufacturing method. According to the present invention, spinach and a curled mallow are trimmed and washed, cut and ground marsh snails are mixed with green onion, onion, soybean paste, garlic, and ginger, and the mixture is steamed, rapidly cooled, dried, and packaged such that soup can be boiled. The present invention includes: a cabbage processing step (S10) of trimming and washing a harvested cabbage and then cutting it to a size of 1 cm to 3 cm; a daikon processing step (S20) of trimming and washing a daikon and then grinding it to a size of 100 meshes to 200 meshes by using a grinder; a mixture mixing step (S30) of supplying a mixer with 30 to 60 wt% of the cabbage, 10 to 20 wt% of the ground daikon, 1 to 2 wt% of the green onion, 10 to 30 wt% of the soybean paste, 5 to 15 wt% of a garlic-kelp powder condiment, 3 to 7 wt% of anchovy powder, and 3 to 5% of a pepper powder-ginger condiment and then mixing the mixture for 10 to 30 minutes; a step (S40) of steaming the mixture for 50 to 90 minutes in a steaming apparatus; a rapid cooling and drying step (S50) of drying the steamed mixture for 12 to 20 hours in a rapid cooling dryer maintaining 45 to 80 degrees Celsius; and a packaging step (S60) of packaging the rapidly cooled and dried mixture in a plastic pack or a packaging container.;COPYRIGHT KIPO 2017
