The present invention relates to a technology of removing malodor and salinity of food waste capable of minimizing salt concentration and reducing malodor generated during fermentation or drying processes of food waste. The present invention provides a manufacturing method of a composition for removing malodor and salinity of food waste which comprises the following: a first activated red mud production step of producing first activated red mud by drying red mud having alkaline properties; and a composition production step of mixing the first activated red mud with at least one among magnesium oxide, calcium oxide, titan oxide, zeolite, and bentonite, and making the mixture have a chemical reaction at a temperature higher than a predetermined temperature to obtain a powder form composition for removing malodor and salinity.;COPYRIGHT KIPO 2017
