The present invention relates to an antioxidant composition with increased antioxidant activities by increasing expression of antioxidant enzyme by fermenting a composite extract of mate, Houttuyniae Herba, star anise, and sea mustard using yeast, and a production method thereof. According to the present invention, the antioxidant composition shows scavenging activities against 1,1-diphenyl-2-picrylhydrazyl (DPPH) radicals and 2,2-azinobis(3-ethylbenzothiazoline-6-sulfonate) (ABTS) radicals, and also increases expression of superoxide dismutase (SOD)-1, SOD-2, and catalase, thereby exhibiting outstanding antioxidant activities. Accordingly, the antioxidant composition can be effective in producing novel foods, pharmaceutical compositions, and cosmetic compositions.
