摘要

The present invention relates to a low molecular weight polysaccharide kelp extract ensuring antioxidative functions, a kelp/tuna-derived liquid sauce containing the same, and a production method thereof. More specifically, the present invention relates to a low molecular weight polysaccharide kelp extract having antioxidative functions, which is produced by the following steps: obtaining an extract containing low molecular weight storage polysaccharide while preventing elution of high molecular weight mucous polysaccharide as much as possible with high temperature heating in purified water with regulated pH4-5; and undergoing ultra filtration. The present invention further relates to a kelp/tuna liquid sauce ensuring antioxidative functions and purposes, which is produced by the following steps: extracting smoked tuna at a high temperature to process protein substances in an aqueous solution into low molecular substance by enzymatic degradation; mixing the tuna extract having functionality and flavor; adding seasoning ingredients such as soy sauce, salt, sugar, and amino acid; and mixing, dissolving, and sterilizing the same.;COPYRIGHT KIPO 2017
