The present invention provides a composition for the production of dietary fiber-reinforced functional ingredients and a method for preparing the same. The rice gruel of the present invention is prepared by using a rice flour mix with stabilized rice bran and resistant starch added to rice flour, which shows a high dietary fiber content as high as brown rice and has a good texture. The present invention can overcome the disadvantages of the texture and texture that appear when rice flour is manufactured by using brown rice. The invented rice flour can be used as a raw material of rice flour, / RTI and exhibits high functionality and shelf life.
