The present invention relates to a method of manufacturing a fermented product of dandelion having enhanced mucilage and gamma-aminobutyric acid (GABA) by using a sugared dandelion extract, and provides a method of manufacturing a fermented product of dandelion having enhanced mucilage and GABA by using a Bacillus subtilis HA starter and a Lactobacillus plantarum K154 starter. As a result, a functional material, such as mucilage (gamma-poly glutamic acid (PGA)), GABA, and peptide is enriched, physical properties are improved, and a functional food material having liver function mitigation and immunity enhancement effect can be provided.;COPYRIGHT KIPO 2017
