The present invention provides a device for pre-cooling and pre-dehumidifying respiratory fruit. According to the present invention, when respiratory fruit such as blueberries, peaches, and plums are pre-cooled and pre-dehumidified by a differential pressure method, the device for pre-cooling and pre-dehumidifying respiratory fruit has a simple and light structure without an additional cooling device and a low-temperature storage chamber, has an air blowing space for differential pressure, inhibits an increase in temperature in a rapid and uniform manner in a harvesting step, induces a decrease of the temperature during selection and packaging processes in a low-temperature selection place, increase storage ability and transferability of the fruit, and increase the quality of the fruit by maintaining its moisture. An air blower (130) is installed in the center of the front surface unit in a rectangular shape. A control unit (140) is installed on the front surface unit and controls the operation of the air blower. A plurality of pipes is joined to form a cube which accommodates a rear side of the air blower (130) from the rear side of the front surface unit. Impurities blocking safe meshes (150) are installed on left, right, and rear sides of a space formed in the cube. Interruption by contact between the air blower (130) and a harvesting box (220) which is stacked on the rear side of the front surface unit and has ventilation holes and entrance of impurities occurring during the pre-cooling and pre-dehumidifying process of the fruit contained in the harvesting box (200) having the ventilation hole into the air blower (130) are prevented to protect the air blower.
