Process (1) for obtaining milk skin, comprising at least one reiteration of the following steps: a first step (E1) in which raw, non-homogenized, unpasteurized and non-sterilized milk is poured into a container, preferably a vat or saucepan; A second step (E2) for heating the milk so that it reaches a temperature of between 50 and 70 ° C, preferably at 60 ° C; A third step (E3) of maintaining the temperature of the milk at a constant value for a few minutes before bringing it to a boil; A fourth step (E4) of boiling the milk; A fifth stage (E5) of resting the milk, after boiling; A sixth step (E6) for recovering the milk skin thus formed on the surface of the milk.
