To provide a method of producing dry organic sludge in which the time for producing dry organic sludge by drying organic sludge by heat of fermentation can be shortened.SOLUTION: The organic sludge is dried by using the heat of fermentation generated by fermentation of the organic sludge, to produce dry organic sludge. The temperature of a fermentation chamber 20 is controlled by performing: a step of raising the temperature of the fermentation chamber 20 by using exhaust heat from the industrial furnace with respect to the organic sludge fermentation chamber 20; and a step of supplying the heat in the fermentation chamber 20 to the industrial furnace to lower the temperature of the fermentation chamber 20.SELECTED DRAWING: Figure 1
