Improved dry matrix for embedding live E. coli, process for its production and use thereof

A live Escherichia coli (E. coli) embedded in a matrix, wherein the matrix has a water activity (aw) of 0.3 or less, and the matrix forms a hydrocolloid. E. coli is provided comprising a polysaccharide, a second polysaccharide different from the first polysaccharide, and a disaccharide comprising sucrose, trehalose or combinations thereof.
