PROBLEM TO BE SOLVED: To provide a brewing yeast in which the brewing characteristics have been desirably modified by inhibiting gene function.SOLUTION: A method of producing a brewing yeast with high isoamyl acetate productivity, acetic acid productivity of low productivity, and high isoamyl alcohol productivity includes a RPD3 gene or HDA1 gene function inhibition in a brewing yeast. The brewing yeast with the RPD3 gene or HDA1 gene function inhibition exhibits preferred brewing characteristics such as increasing the productivity of isoamyl acetate which is an aromatic substance in alcoholic beverages, whereas the productivity of ethyl acetate thought to cause off-flavors while being an acetate ester like isoamyl acetate is not increased significantly, and further reducing the productivity of acetic acid which is a causative agent of acidic odors, and increasing the productivity of isoamyl alcohol which is the substrate for the biosynthesis of isoamyl acetate.SELECTED DRAWING: None
