PROBLEM TO BE SOLVED: To provide a manufacturing method of mutant yeast utilizing a UV-LED; mutant yeast having higher producing ability of ethyl caproate than parent strain, and fermenting power equal to or higher than parent strain; use of mutant yeast for production of fermented food/drink; and a UV-LED irradiation device for microorganism mutant.SOLUTION: There are provided a manufacturing method of mutant yeast including: a process of performing ultraviolet irradiation to yeast by using a UV-LED as a light source; a process of culturing yeast after irradiation by a cerulenin-containing culture medium; and a process of obtaining yeast having higher producing ability of ethyl caproate comparing to a parent strain and fermenting power equal to or higher than the strain out of cerulenin-resistant yeast raised in the cerulenin-containing culture medium; mutant yeast having higher producing ability of ethyl caproate comparing to parent strain and fermenting power equal to or higher than the strain; a production method of fermented food/drink by using the mutant yeast; and a UV-LED irradiation device for microorganism mutant which has a container attaching part and a light source attaching part, and is capable of ultraviolet irradiation to microorganism in a container attached to the container attaching part by a UV-LED attached to the light source attaching part.SELECTED DRAWING: None
