The present invention provides not only an efficient process for extraction of shikimic acid, but also a new natural source of this compound.Optimization of extraction process of shikimic acid from different organs of plants of Calophyllum Brasiliense was established.The process is simple, fast and low cost when compared with other used for extraction of shikimic acid in plant tissue.The main advantages of this process lies in the use of water as extraction and on the fact that the extraction is carried out at room temperature.The short time of extraction contributes to make the process less onerous. The process was capable of extracting a quantity of shikimic acid which corresponds to 3.76% of the dry matter of leaf.
