The invention relates to a method or process for large scale production of laccase enzyme from Bacillus species by solid state fermentation using fruit juice by product as a substrate, comprising the steps of subjecting fruit juice substrate to solid state fermentation (SSF) with Bacillus sp.MSK-01 under a controlled environmental condition, followed by inoculation of the substrate at a predefined pH; and incubating the inoculated substrate at a predefined temperature, thereby producing laccase enzyme.
