The present invention relates to an avocado dehydration process for the production of pieces and powder products of its embryo which is circumscribed in the field of new food preservation technologies, using said products for direct human consumption (Snacks) and as a raw material in the manufacture of other food products. Said process involves the use of avocado pulp in chunks and the powder of its dehydrated embryo by the lyophilization process, which comprises pulping-slicing and sifting the embryo, freezing inside the lyophilization chamber or out of it, and dehydration in lyophilization chamber by the handling of three factors or variables.
