The invention relates to an installation and a process for preserving bee pollen. According to the invention, the installation consists of a glass hopper () for storing the collected pollen, a first enclosure () for storing the pollen and pressing the same in layers in some glass recipients (), a carrousel () where the recipients () are placed for dosing the pollen and a second enclosure for storing the recipients () provided with a system for thermostating and conditioning the air within the enclosure. As claimed by the invention, the process consists in collecting the bee pollen at intervals of 1...2 h, introducing the same, within 1...2 h since harvesting, in successive layers of 2 cm, into some glass recipients which are placed inside a first enclosure, at a temperature of 34...35°C, pressing the pollen in layers until the recipients are filled, the recipients being further sealed and placed inside a second enclosure provided with a system of thermostating and conditioning the air, where they are kept for 21 days, after which the protein content is analyzed, its value being of 20.6% after 110 days of preservation.
