Process for the production of - a chitin / glucan complex comprising chitin / chitosan and glucan; and - polymers containing glucose, mannose and / galactose, where the process comprises the following steps: - fermentation of Pichia pastoris DSMZ70877 in a culture medium comprising a nitrogen source and also comprising as a carbon source: -a rich by-product in glycerol generated by the biodiesel industry, a mixture containing glycerol, an alcohol, a sugar, an organic acid, a polyol, a fatty acid or amino acid, in its monomeric, dimeric or oligomeric forms; and - a food or industrial waste or by-product, containing one or more of glycerol, an alcohol, a sugar, an organic acid, a fatty acid or an amino acid, in its monomeric, dimeric or oligomeric forms; and - pH control during fermentation.
