Disclosed is a temperature sensor (T1, T2) monitoring method for a water tank (1). The method comprises: when cold water or hot water is injected into the water tank (1), acquiring temperatures detected by temperature sensors (T1, T2) in the water tank (1), and determining the sequence of the change rate, exceeding a pre-set rate, of the temperatures detected by the temperature sensors (T1, T2); judging whether the sequence is consistent with the theoretical temperature change sequence corresponding to currently-stored definition information about the temperature sensors (T1, T2); and if it is determined that same are inconsistent, updating the currently-stored definition information according to the sequence. Further provided are a temperature sensor (T1, T2) monitoring device for a water tank (1), and a hot water system. Compared with the manual distinguishing method in the prior art, the temperature sensor monitoring method is more reliable, it is not necessary to manufacture a great number of different types of interfaces compared with the distinguishing method through different interfaces in the prior art, and the inconvenience caused for the production organization, after-sales repair stocks, etc. is eliminated.
