The present invention relates to the field of machines for preparing coffee-based beverages, including automatic coffee makers for domestic and professional use. Proposed is a coffee machine that comprises a container 1 for receiving and storing coffee beans, a grinding unit with a measuring dispenser, a brewing unit 9, and an electronic control unit. The container for receiving and storing coffee beans is provided with a system for protecting the quality of the coffee beans, comprising an assembly that supplies inert gases directly into and/or around the coffee storage container. Said system for protecting the quality of the coffee beans from factors of ageing can additionally comprise an assembly for cooling said coffee storage container. The present coffee machine makes it possible to preserve the quality of the coffee beans in the container for receiving and storing coffee beans, and to improve the quality of the final beverage.
