The present invention relates to pH-sensitive nematic double emulsion droplets and a method of forming the same. According to the present invention, a method of forming double emulsion droplets by using an outer capillary tube including an injection capillary tube and a collection capillary tube comprises: a first step in which a first hydrophilic fluid, a second hydrophilic fluid, and a lipophilic fluid are injected in the outer capillary tube; a second step in which the first hydrophilic fluid forms an inner fluid inside the injection capillary tube, the lipophilic fluid forms a middle fluid outside the injection capillary tube, and the second hydrophilic fluid forms an outer fluid inside and outside the collection capillary tube; a third step in which the middle fluid continuously drops into the outer fluid to form a double emulsion droplet at an orifice formed between the injection capillary tube and the collection capillary tube while surrounding the inner fluid; and a fourth step in which the double emulsion droplet is coated with a liquid crystal copolymer.
