The present invention relates to a method for producing a Curcuma xanthorrhiza Roxb. extract; an extract including xanthorrhizol, curcumine, immunopolysaccharide, and insoluble edible fiber, which is obtained by the method; and a general food, health functional food, cosmetic product, or pharmaceutical composition including the extract as an active ingredient. The method comprises the steps of: obtaining an extract having xanthorrhizol as an active ingredient by performing supercritical extraction on Curcuma xanthorrhiza Roxb.; obtaining an extract having curcumine as an active ingredient by performing liquor extraction or supercritical extraction on the supercritical extraction residue; obtaining immunopolysaccharide having an average molecular weight of 33,000 Da by enzymatically treating the liquor extraction or supercritical extraction residue; and obtaining insoluble edible fiber from the enzymatically treated residue. The method according to the present invention gradually applies various extraction schemes, thereby obtaining various kinds of natural extracts from one ingredient and being able to be very useful in producing an extract using a natural material.
