The present invention relates to a manufacturing method of fermented soybeans using Bacillus subtilis SRCM100757 strains producing vitamin K2 and γ-PGA and secreting amylase, protease and cellulase. The Bacillus subtilis SRCM100757 strains of the present invention produce vitamin K2 and γ-PGA, and secrete amylase, protease and cellulase. Thus the fermented soybeans using the strains or a culture medium thereof as a starter strain can be usefully used for the production of functional paste-like sauce, and expected to be very useful for the sauce industry.
