The present invention relates to a method of making a roasted edible insect and a roasted edible insect manufactured through the same. According to the present invention, the method includes: an edible insect preparing step (S100) of preparing edible insects; an excreta removing step (S200) of removing excreta from internal organs of the prepared edible insects; a first edible insects washing step (S300) of removing foreign substances of the edible insects by boiling the edible insects in bamboo salt water; a second edible insects washing and drying step (S400) of removing remaining moisture from the edible insects; an edible insect smashing step (S500) of smashing the dehydrated edible insects; an aging step (S600) of aging the smashed edible insects; a sub-ingredient preparing step (S700) of preparing sub-ingredients; a mixing step (S800) of mixing a mixture and fermented essence with the aged edible insects; an edible insect piece making step (S900) of making edible insect pieces; an edible insect piece smoking and aging step (S1000) of making the scents of oak and apple trees permeate into the edible insect pieces by aging the pieces; and a roasting step (S1100) of roasting the smoked and aged edible insect pieces. As such, the present invention is capable of improving the preference of consumers by removing the unique flavor of insects.
