In this specification, an Aspergillus sojae strain, a method for producing a leucineaminopeptidase using the same, and a method for producing a food using the same are disclosed. The strain, which is an aspect of the present invention, has high lucinaminopeptidase activity and can be cultured to produce a large amount of lucinaminopeptidase. In addition, when the food is fermented using the strain, the bitter taste of the food is reduced and a food having excellent flavor can be obtained. In addition, since the strain of the present invention does not produce a toxic substance, it can be usefully used in food or pharmaceutical fields.
