The present invention relates to a process for producing an Angelica gigas polysaccharide extract having an immunity enhancing effect, and to a composition thereof, and specifically, to a method for obtaining the Angelica gigas polysaccharide extract by the following steps: extracting Angelica gigas as alcohol to extract anti-inflammatory components; extracting remaining barks again with water to obtain an extraction liquid; pulverizing the extraction liquid to obtain a powder; adding a diluted alcohol to remove components dissolved in the alcohol; and recovering obtained solid materials and obtain the Angelica gigas polysaccharide extract by a pulverizing process, and to the provision of the composition for food containing the Angelica gigas polysaccharide extract as a main ingredient and the composition for enhancing immunity.
