The following are effects of the present invention. Since the shellfish peeling device is used for automatically peeling shellfish without manual work, a large number of shellfish are able to be peeled with increased productivity and work efficiency. And since shellfish are cleanly peeled through the shellfish peeling device, irregular residues are minimized and washing is convenient, so productivity is maximized. Also, since the shellfish are peeled by punching only the adductor muscle of the shellfish, damage to the flesh of the shellfish is able to be minimized, and thus, the freshness of the product is able to be maintained. Moreover, since various oyster product problems of a conventional shellfish peeling method about labor force, expenditure, and working hour are able to be solved, raw oysters are able to be smoothly supplied and their quality is able to be maintained, and time and costs are able to be considerably reduced, and thus, profits of fish farms are able to be increased.
